Customers take their preferences and traditions with them when they order food.

People from a Jewish tradition often avoid pork and shellfish. Those from a Muslim tradition often avoid pork and alcohol. Those from a Hindu tradition avoid beef and most avoid meat and eggs. Ethiopian Orthodox Christians avoid animal products two days each week and during Lent.

Health, humane, environmental, social justice or religious concerns: Many people avoid meat or all animal products.

Universal recipes and Inclusive recipes are a simple set of guidelines that meet a wide range of food requirements and can be implemented anywhere food is served.

Inclusive-recipe that contains ‘no animal products or byproducts, including meat, poultry, fish, dairy, eggs,’ and exclude alcohol and sesame and would therefore be acceptable for most major religions’ directives.

Universal-recipe that contains ‘no animal products or byproducts, including meat, poultry, fish, dairy, or eggs’, does not contain alcohol, and also does not contain the possible allergens – gluten containing grains, soy, tree nuts, peanuts or sesame and would therefore be acceptable for most major religions’ directives.

“Plant-based” or “vegan” – recipes that contain no animal products or byproducts, including meat, poultry, fish, dairy, or eggs.

Specific to hospitals, in June 2017, the American Medical Association passed a Healthy Food Options in Hospitals resolution that calls on U.S. hospitals to improve the health of patients, staff, and visitors by providing plant-based meals.
